Why fair odds are the starting point
Two −110 sides imply 52.4% each — that's 104.8% total, and the extra 4.8% is the book's hold. The real probabilities can't sum to more than 100%, so we normalize them back down. The result — the no-vig line — is the sharpest estimate of the true price, and it's exactly what you compare against to find value. It's the same baseline Statly's Edge Score is measured against.
